Rustic Herbes de Provence Roasted Potatoes

Ingredients
  

  • 2 lb baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary, crushed
  • to taste salt and black pepper

Instructions
 

  • Preheat oven to 425°F (220°C).
  • In a large bowl, toss the halved potatoes with olive oil, oregano, thyme, rosemary, salt, and pepper until evenly coated.
  • Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
  • Roast in the oven for 35–40 minutes, flipping halfway through, until golden brown and crispy on the edges.
  • Remove from oven and let cool slightly before serving. Enjoy as a flavorful side to your favorite main dishes.
