Rustic Herbes de Provence Roasted Potatoes

- 2 lb baby potatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary, crushed

Preheat oven to 425°F (220°C).
In a large bowl, toss the halved potatoes with olive oil, oregano, thyme, rosemary, salt, and pepper until evenly coated.
Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
