Hearty Breakfast Burritos

Ingredients
  

  • 12 slices bacon, diced
  • 12 eggs, lightly beaten
  • to taste salt and pepper
  • 10 pieces 8-inch flour tortillas
  • 1 1/2 cups shredded Cheddar cheese
  • 1/2 cup thinly sliced green onions

Instructions
 

  • Cook diced bacon in a large skillet over medium heat until crispy. Remove with a slotted spoon and drain on paper towels.
  • Drain some bacon fat, leaving about 1 tablespoon in the skillet.
  • Pour beaten eggs into the skillet with bacon fat. Season with salt and pepper. Cook over medium-low heat, stirring gently, until eggs are softly scrambled and cooked through.
  • Remove scrambled eggs from skillet and mix with cooked bacon, shredded Cheddar cheese, and sliced green onions in a bowl.
  • Warm tortillas in the microwave or a dry skillet until pliable.
  • Divide the egg and bacon mixture evenly among the tortillas, placing the filling in the center of each.
  • Fold in the sides and roll up each tortilla tightly to form burritos.
  • If desired, return burritos to the skillet seam side down for 1–2 minutes to seal and warm through.
  • Serve warm and enjoy your hearty breakfast burritos!
