Hearty Breakfast Burritos
Savory breakfast burritos filled with crispy bacon, fluffy scrambled eggs, melted cheddar, and fresh green onions—perfect for a satisfying morning meal.
Ingredients
- 12 slices bacon, diced
- 12 eggs, lightly beaten
- to taste salt and pepper
- 10 pieces 8-inch flour tortillas
- 1 1/2 cups shredded Cheddar cheese
- 1/2 cup thinly sliced green onions
Instructions
- Cook diced bacon in a large skillet over medium heat until crispy. Remove with a slotted spoon and drain on paper towels.
- Drain some bacon fat, leaving about 1 tablespoon in the skillet.
- Pour beaten eggs into the skillet with bacon fat. Season with salt and pepper. Cook over medium-low heat, stirring gently, until eggs are softly scrambled and cooked through.
- Remove scrambled eggs from skillet and mix with cooked bacon, shredded Cheddar cheese, and sliced green onions in a bowl.
- Warm tortillas in the microwave or a dry skillet until pliable.
- Divide the egg and bacon mixture evenly among the tortillas, placing the filling in the center of each.
- Fold in the sides and roll up each tortilla tightly to form burritos.
- If desired, return burritos to the skillet seam side down for 1–2 minutes to seal and warm through.
