Great Pumpkin Cheese Sandwiches
Warm, cheesy tortillas layered with a buttery, seasoned pumpkin and cheddar filling, perfect as a cozy snack or light meal.
Ingredients
- 3 cups shredded Cheddar cheese
- 3/4 cup butter or margarine, softened
- 1/2 teaspoon garlic salt
- 1/2 teaspoon onion salt
- 9 pieces 6-inch flour tortillas
- to taste paprika
- 3 sticks celery with leaves (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a medium bowl, beat eggs lightly.
- Add softened butter, garlic salt, onion salt, and paprika to the eggs and mix well until combined.
- Fold in the shredded Cheddar cheese to create a thick filling.
- Spread the cheese mixture evenly onto half of each tortilla, then fold the other half over to form a sandwich.
- Place sandwiches on a baking sheet lined with parchment paper.
- Bake for 15–20 minutes until the cheese is melted and tortillas are golden brown.
- Remove from oven and let cool slightly before serving.
- Serve warm with celery sticks on the side for a fresh crunch, if desired.
