Great Pumpkin Cheese Sandwiches

Warm, cheesy tortillas layered with a buttery, seasoned pumpkin and cheddar filling, perfect as a cozy snack or light meal.

Ingredients
  

  • 3 cups shredded Cheddar cheese
  • 3/4 cup butter or margarine, softened
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon onion salt
  • 9 pieces 6-inch flour tortillas
  • to taste paprika
  • 3 sticks celery with leaves (optional)

Instructions
 

  • Preheat oven to 350°F (175°C).
  • In a medium bowl, beat eggs lightly.
  • Add softened butter, garlic salt, onion salt, and paprika to the eggs and mix well until combined.
  • Fold in the shredded Cheddar cheese to create a thick filling.
  • Spread the cheese mixture evenly onto half of each tortilla, then fold the other half over to form a sandwich.
  • Place sandwiches on a baking sheet lined with parchment paper.
  • Bake for 15–20 minutes until the cheese is melted and tortillas are golden brown.
  • Remove from oven and let cool slightly before serving.
  • Serve warm with celery sticks on the side for a fresh crunch, if desired.
