Paula Dean's Sweet & Savory Meatloaf

A classic, comforting meatloaf sweetened with brown sugar and tangy ketchup, packed with fresh green pepper for a bit of crunch and flavor.

Ingredients
  

  • 1 lb ground beef
  • 1/2 cup ketchup
  • 2 tablespoons light brown sugar
  • 1/2 cup green pepper, finely chopped
  • 2 large eggs

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the ground beef, chopped green pepper, and eggs. Mix gently until well combined.
  • In a small bowl, mix half of the ketchup with the light brown sugar to create a sweet glaze.
  • Shape the meat mixture into a loaf and place it in a lightly greased baking dish or loaf pan.
  • Spread the ketchup and brown sugar glaze evenly over the top of the meatloaf.
  • Bake in the preheated oven for about 45–50 minutes, or until the meatloaf is cooked through and the internal temperature reaches 160°F (71°C).
  • Remove from the oven and let it rest for 5–10 minutes before slicing and serving.
