Paula Dean's Sweet & Savory Meatloaf
A classic, comforting meatloaf sweetened with brown sugar and tangy ketchup, packed with fresh green pepper for a bit of crunch and flavor.

- 1 lb ground beef
- 1/2 cup ketchup
- 2 tablespoons light brown sugar
- 1/2 cup green pepper, finely chopped
- 2 large eggs
Preheat the oven to 350°F (175°C).
In a large bowl, combine the ground beef, chopped green pepper, and eggs. Mix gently until well combined.
In a small bowl, mix half of the ketchup with the light brown sugar to create a sweet glaze.
Shape the meat mixture into a loaf and place it in a lightly greased baking dish or loaf pan.
Spread the ketchup and brown sugar glaze evenly over the top of the meatloaf.
Bake in the preheated oven for about 45–50 minutes, or until the meatloaf is cooked through and the internal temperature reaches 160°F (71°C).
Remove from the oven and let it rest for 5–10 minutes before slicing and serving.
