Herb-Roasted Lamb Chops

Ingredients
  

  • 1.5 lbs lamb chops
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Rub the lamb chops with olive oil, rosemary, thyme, salt, and black pepper.
  • Heat a skillet over medium-high heat and sear the lamb chops for 2-3 minutes per side until browned.
  • Transfer the skillet to the oven and roast for 8-12 minutes for medium-rare, or longer to desired doneness.
  • Remove from oven and let rest for 5 minutes before serving.
