Herb-Roasted Lamb Chops

Ingredients
- 1.5 lbs lamb chops
- 2 tablespoons olive oil
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Rub the lamb chops with olive oil, rosemary, thyme, salt, and black pepper.
- Heat a skillet over medium-high heat and sear the lamb chops for 2-3 minutes per side until browned.
- Transfer the skillet to the oven and roast for 8-12 minutes for medium-rare, or longer to desired doneness.
