Crispy Fried Scrapple Sandwiches with Spicy Mustard

Ingredients
vegetable oil
fresh scrapple (about 1/4 inch thick each)
bread, toasted
prepared spicy mustard
Instructions
- Heat the vegetable oil in a large skillet over medium heat until shimmering.
- Add the scrapple slices to the skillet and fry until golden brown and crispy on each side, about 3-4 minutes per side.
- Remove the scrapple from the skillet and place on a paper towel-lined plate to drain excess oil.
- Spread 1/2 teaspoon of spicy mustard on four slices of toasted bread.
- Place a crispy scrapple slice on top of each mustard-spread bread slice.
- Top with the remaining toasted bread slices to form sandwiches.
- Slice sandwiches in half and serve warm, optionally with extra mustard on the side for dipping.
