Crispy Fried Scrapple Sandwiches with Spicy Mustard

Golden, crispy fried scrapple slices sandwiched between toasted bread with a zesty touch of spicy mustard for a savory, satisfying meal.

Ingredients
  

vegetable oil

    fresh scrapple (about 1/4 inch thick each)

      bread, toasted

        prepared spicy mustard

          Instructions
           

          • Heat the vegetable oil in a large skillet over medium heat until shimmering.
          • Add the scrapple slices to the skillet and fry until golden brown and crispy on each side, about 3-4 minutes per side.
          • Remove the scrapple from the skillet and place on a paper towel-lined plate to drain excess oil.
          • Spread 1/2 teaspoon of spicy mustard on four slices of toasted bread.
          • Place a crispy scrapple slice on top of each mustard-spread bread slice.
          • Top with the remaining toasted bread slices to form sandwiches.
          • Slice sandwiches in half and serve warm, optionally with extra mustard on the side for dipping.
