Crispy Fried Scrapple Sandwiches with Spicy Mustard

Heat the vegetable oil in a large skillet over medium heat until shimmering.
Add the scrapple slices to the skillet and fry until golden brown and crispy on each side, about 3-4 minutes per side.
Remove the scrapple from the skillet and place on a paper towel-lined plate to drain excess oil.
Spread 1/2 teaspoon of spicy mustard on four slices of toasted bread.
Place a crispy scrapple slice on top of each mustard-spread bread slice.
Top with the remaining toasted bread slices to form sandwiches.
