Fresh & Zesty Greek Salad

A vibrant Greek salad bursting with fresh romaine, juicy tomatoes, crisp cucumbers, tangy feta, and briny olives, all tossed in a bright, herby vinaigrette.

Ingredients
  

extra-virgin olive oil

    red wine vinegar

      lemon juice

        chopped oregano

          chopped mint

            salt and freshly ground pepper

              romaine lettuce, torn

                medium tomatoes, cored and cut into wedges

                  Kirby cucumbers, peeled and sliced 1/2 inch thick

                    feta cheese, crumbled

                      Gaeta olives, pitted

                        Instructions
                         

                        • In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, chopped oregano, chopped mint, salt, and freshly ground pepper until well combined.
                        • In a large salad bowl, combine torn romaine lettuce, tomato wedges, and sliced cucumbers.
                        • Pour the dressing over the vegetables and toss gently to coat everything evenly.
                        • Sprinkle the crumbled feta cheese and Gaeta olives on top of the salad.
                        • Give the salad a final gentle toss to distribute the cheese and olives, then serve immediately.
