In a medium saucepan, heat olive oil over medium heat.
Add the rinsed rice and toast it gently for 2-3 minutes, stirring frequently.
Pour in the water, then stir in salt and Italian seasoning.
Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until rice is tender and water is absorbed.
Remove from heat and let it sit covered for 5 minutes to steam.
Fluff the rice with a fork, then drizzle lime juice and lemon juice over the top.
Gently mix to combine the citrus flavors throughout the rice.
Serve warm as a zesty side dish or a light main.
