Angie's Zesty Italian Rice Festival

A bright and flavorful long grain rice dish infused with fresh lime and lemon juices, perfectly seasoned with Italian herbs for a refreshing twist.

Ingredients
  

  • 1 cup long grain rice
  • 2 cups water
  • 2 tablespoons lime juice
  • 1 tablespoon lemon juice
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil

Instructions
 

  • Rinse the long grain rice under cold water until the water runs clear to remove excess starch.
  • In a medium saucepan, heat olive oil over medium heat.
  • Add the rinsed rice and toast it gently for 2-3 minutes, stirring frequently.
  • Pour in the water, then stir in salt and Italian seasoning.
  • Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until rice is tender and water is absorbed.
  • Remove from heat and let it sit covered for 5 minutes to steam.
  • Fluff the rice with a fork, then drizzle lime juice and lemon juice over the top.
  • Gently mix to combine the citrus flavors throughout the rice.
  • Serve warm as a zesty side dish or a light main.
