Preheat your oven to 350°F (175°C).
In a medium bowl, combine the softened cream cheese, paprika, Parmesan cheese, garlic powder, salt, pepper, and shredded cheddar cheese. Mix until smooth and well blended.
Fill each jalapeño half generously with the cheese mixture.
Place the stuffed jalapeños on a baking sheet lined with parchment paper or a greased baking dish.
Sprinkle extra shredded cheddar cheese over the tops of the stuffed jalapeños.
Bake in the preheated oven for about 45 minutes. Check occasionally – the jalapeños should be tender enough to easily pierce with a fork, and the cheese on top should be nicely browned but not burnt.
Remove from oven and let cool slightly before serving. Enjoy warm as a spicy, cheesy appetizer!
